Delicious Waste Chefs’ Competition at the Cinnamon Grand
The ‘Delicious Waste Chefs’ Competition 2013’, held on the 05th of September, was a pioneering initiative in minimizing food waste and encouraging creativity amongst Chefs, launched for the first time in Sri Lanka, by Cinnamon Grand Colombo. The competition saw 41 Senior and Junior Chefs presenting 73 delicious dishes in the ‘Breakfast’, ‘Lunch’, ‘Dinner’ , ‘Snack ‘and ‘Dessert’ categories, with the winners walking away with cash prizes, medals and certificates.
The judges for the competition were celebrity Chef Hemalallindre Ranawake (aka Koluu), internationally acclaimed Queen of curries Felicia Sorensen, renowned travel writer Savithri Rodrigo and Cinnamon Grand’s General Manager Rohan Karr.
As Colombo’s largest five star property, with 501 rooms and 13 restaurants, the Cinnamon Grand remains committed to minimizing food waste, with food waste management an integral part of the hotel’s day to day functions. With this in mind, the Grand’s Marketing Communications and Sustainability Department in collaboration the hotel’s team of Chefs presented the ‘Delicious Waste’ initiative, so as to encourage and inspire the hotels associates as well as other stakeholders to play a proactive role in reducing food waste. In doing so, the Chefs put their culinary creativity to task, in preparing unique and ‘delicious’ dishes with ingredients that would not usually be considered as ‘delicious.’
The initiative was in keeping with the UN Environment Programme (UNEP) and UN Food and Agricultural Organization’s (FAO) theme for this year; Think.Eat.Save. Reduce Your Food-print, aimed at reducing the world’s food waste, as well as Cinnamon Grand targets of reducing it’s Food-print by 25% each year.
